How to Bake A Great Angel Food Cake

If you have ever had an angel food cake that was purchased from the store, then you may associate think that all angel food cakes taste like what styrofoam would taste like sweetened. For a great angel food cake, you want it to be moist, tender, extremely light, and possess just the right amount of sweetness.

For a truly great angel food cake, you will need the following ingredients:

1 1/2 cups of room-temperature egg whites (this is around 10-12 large eggs)
1 1/2 cups of superfine sugar, divided
1 cup of cake flour, sifted
1 teaspoon of cream of tartar
1/4 teaspoon of salt
2 teaspoons of vanilla extract (vanilla paste can be used as well)
1/2 teaspoons of almond extract

In order to make this truly delicious dessert you will need to follow these directions:

The first step is to pre-heat your oven to 325 degrees Fahrenheit. Once you have the oven pre-heating, whisk together 3/4 cups of the sugar and all of the cake flour in a small bowl. In a separate bowl, beat the egg whites until they are frothy. Once the egg whites are frothy, add the cream of tartar and the salt. Beat the mixture until it is fully incorporated and then slowly begin to add the remaining sugar. After the sugar has been added beat the egg whites so they form soft peaks. Next, add vanilla and almond extract then beat to distribute evenly.

The next step is to sift the flour mixture over the egg whites and gently fold it in. You will want to do this slowly so as not to deflate the egg whites.

After the flour mixture has been added, spoon the batter into an ungreased 9 inch tube pan that has a removable bottom. Using a spatula smooth the top and tap the pan against the counter to remove any air bubbles beneath the surface.

Place pan into the pre-heated oven and back for 50-60 minutes. You will know the cake is finished when the tops springs back slightly when softly pressed.
